Cleansing Autumn Soup

This Cleansing Autumn Soup recipe has been taken from my 21 Day Autumn Cleanse ebook. Not only is it cleansing, it is nourishing and when consumed every day in autumn will help recalibrate your taste buds and hunger signals. This soup also helps to heal your digestive system – easy to digest, rich in restorative gut flora loving nutrients and healing and soothing to the mucous membranes in the gut, excellent for leaky gut. Excellent for bolstering the immunity with the addition of anti microbial herbs & spices.

It is quick and simple to make. A base of bone stock, raw or left over seasonal Autumn vegetables, protein in the form of meat, fish, seafood, chicken or eggs, fresh herbs, dried herbs & spices and seasonings.

INGREDIENTS

1 cup diced seasonal vegetables e.g. fennel, spinach, kale, chard, tomato, carrot, celery, onion, zucchini, capsicum, cauliflower, cabbage, pumpkin

2 cups bone stock, made from healthy pastured chicken, beef, lamb or will fish and seafood stock (recipes from the 21 Day Autumn Cleanse ebook). If you a vegetarian choose a fermented miso paste made on rice or buckwheat

1 cup raw or left over cooked meat, fish, seafood, chicken or 2 eggs or add cooked pulses if you are vegetarian or leave out

EXTRA GOODNESS

1 lemon or lime juiced and tested (make sure organic)

1 tablespoon extra-virgin olive oil or coconut oil

1 teaspoon of dried herbs & spices e.g. Ovvio Organic Provincial or Tuscan Herb & Spice Blend, or dried sage, thyme and oregano leaves

SEASON

Natural salt and freshly cracked pepper

1 teaspoon Gomasio or Dukka (recipes from the 21 Day Autumn Cleanse ebook)

Optional: add heat with a sprinkle of chili flakes

METHOD

Bring the stock to a simmer and add meat and vegetables. Simmer for 7 minutes. Add remaining ingredients, simmer for a further 2 minutes, season, garnish and serve.
